What to ask at a tasting

Look at the full label rather than stopping at SBS or SSB. Ask about the blend proportions and what Semillon contributes to that particular release. If a producer offers a varietal Semillon, taste it beside the blend to understand the difference.

Choosing a bottle for the table

Try with simply cooked fish, poultry or vegetable dishes. Ask about the intended drinking window: a fresh release and a bottle selected for ageing are different purchases, even when both carry the same grape name.
